Healthy summer berry sorbet ice lolly recipe


Cool off the kids in this hot weather with this healthy vitamin packed lolly recipe from Marlow nutritionist Sue Bedford. 

Berries are packed full of antioxidants and vital vitamins including vitamin C and manganese. They are are an excellent source of fibre, help regulate insulin levels, reduce cholesterol, give skin a glow, help protect against cancer and keep the arteries healthy…. to name just a few benefits. A cooling ice lollie treat can also be a healthy treat!

Cool off the kids in this hot weather with this healthy vitamin packed lolly recipe from Marlow nutritionist Sue Bedford. 

Berries are packed full of antioxidants and vital vitamins including vitamin C and manganese. They are are an excellent source of fibre, help regulate insulin levels, reduce cholesterol, give skin a glow, help protect against cancer and keep the arteries healthy…. to name just a few benefits!

A cooling ice lollie treat can also be a healthy treat!

Ingredients:

Makes 6 lollies
500g of fresh raspberries, strawberries and blackberries/blueberries chopped 
Juice of an orange and a lemon
3 tablespoons of runny honey 
2 egg whites

 

How to make:

Add the berries, orange, lemon juice into a blender and blend until smooth. Strain through a sieve and place into a container with a lid and freeze for 30 minutes and then give a stir. Repeat and stir after another 30. In a bowl whisk the egg whites until in peaks and then add the honey continue to whisk until glossy.

Add this to the fruit slush and combine together thoroughly. Pour into lolly moulds and add a lolly stick in each one. Add some mint or extra berries for decoration at this point. Freeze until completely set and enjoy!
